Mutton Rogan 25

Ingredients

For Marination

•1.5 kg goat meat – small cut (I prefer to order from Licious)
•1/2 tbsp ginger garlic paste
•1 tbsp yoghurt
•1 tsp turmeric powder
•1 tbsp Salt
•1/2 tsp black salt
•1/2 tsp mustard oil
•1/2 tsp Asafoetida
•1/2 tbsp chilli powder

For Masala

•3/4 tbsp cumin
•1 tbsp fennel
•3/4 tbsp coriander
•6-7 whole red chillies
•1 whole mace (small)

For Curry

•4 small cardamom
•3 big cardamom
•2 sticks cinnamon
•1 star anise
•4-5 cloves
•2 bay leaves
•2 small size onions
•Mustard Oil
•1/2 cup yoghurt finely beaten
•3 tbsp ginger powder
•1 garlic pod minced
•1/2 tsp Asafoetida mixed in 3 tbsp water
•Salt as per taste

Marination

•Mix all ingredients under margination and rest for 2 hours.

Masala Powder

•Dry roast all the ingredients under Masala except the mace.
•Transfer to a plate and let it cool.
•Grind them with the mace to a fine powder

Process

•In an earthen pot (now a days I prefer to cook in an earthen pot), add mustard oil. Let it heat for a min.
•Add the cardamom, star anise, bay leaf, cinnamon and cloves. Fry for a min and then add the onions.
•Fry until the onions are 75% done and then add the meat. Fry for 5 mins.
•Add the Asafoetida mixed in water and fry for another 5-10 mins.
•Add the masala powder and fry for another 5 mins.
•Add the ginger powder and minced garlic and fry for another 10 mins.
•Add the beaten yoghurt, mix well and fry for another 5 mins. Add salt as per taste.
•At this point you can prefer to add a little water. In the earthen pot, I let it cook without adding any water at the lowest heat on gas stove.
•Cover it and let it cook. Every 15-20 mins stir the entire mixture to ensure it does not stick at the bottom.
•Cook until the meat is cooked, should take anywhere between 60-75 mins. If you want it fast, use a pressure cooker and wait for 4-5 whistles.
•Adjust the spiciness and salt as per your taste.

Enjoy with whatever you like – roti, paratha, roomali, rice, mudhi (bhel), chakuli pitha

Chicken Biryani

Chicken Biryani - Biryani 1:1 ratio of meat and rice. I used 8 drumsticks and 1 kg basmati rice. Home made garam masala 4 black cardamoms 10 green cardamoms 2-3 inch cinnamon 10-12 black pepper 7-8 cloves 2 javitri flower 1 nutmeg 1/2 tbsp coriander 1 star anise 2 bay leaves Dry roast everything for 5 mins on medium heat. Take out, cool it down and grind to a fine powder. Wash and soak the rice for 30-45 mins For the chicken marination,  Place 8  pieces drumsticks (washed and patted dry) in a wide vessel. Add 2-3 tbsp ginger garlic paste, 1 tsp turmeric, 2 tsp red chilli powder, 2 tsp coriander powder, 3 tsp garam masala powder, 2 tsp elaichi powder, juice of 1 lemon, 1 inch cinnamon, 2 javitri flower, 1/2 nutmeg, 3-4 black cardamom, 10-12 black pepper and salt as per taste.
