Honey Mustard Mayo Chicken (Kids Special)

Ingredients • 200 grams boneless chicken, thinly sliced (5-7 mm in thickness) • 1/2 tbsp ginger garlic paste • 1/2 tsp turmeric • 1/2 tsp salt • 1 tsp black pepper powder • 1 tbsp refined or olive oil • 1/2 medium sized onion grated • 1/2 tbsp each of tomato sauce, mayonnaise, yellow mustard and honey – whisk well with 1/2 cup water Marination • Mix chicken with ginger garlic paste, turmeric powder, salt and black pepper powder. • Rest for 30 minutes. Process • In a frying pan, add the oil. When hot, add the grated onion and fry for 1-2 minutes. • Lower the flame to between medium and low. Add the chicken pieces in the pan. • Shallow fry the chicken well on each side for 2-3 minutes (some chicken takes 1-2 mins as well). Ingredients • 400 grams Paneer cut into small cubes • 1 tbsp ginger garlic paste • 1 tsp each of red chilli powder, roasted cumin powder, roasted coriander powder, chat masala powder, turmeric, garam masala powder • 1/2 lemon juice • 2-3 tbsp corn flour • 2 small capsicum cut into ½" square • 2 medium onions cut into ½” square • 4 green chilies slit lengthwise • 1.5 tbsp each of finely chopped garlic and ginger • Oil for frying • Salt as per taste • 1 sprig of curry leaves • 4 tbsp whisked curd Marination • Mix cubed paneer with ginger garlic paste, red chilli powder, roasted cumin powder, roasted coriander powder, chat masala powder, turmeric, garam masala powder, lemon juice and corn flour powder. • Keep aside for 30 minutes. • Heat the oil for frying while the paneer rests. Chicken Biryani (My style)

Ingredients Chicken and Marination • 1.5 kg chicken cut into medium pieces (Size like a leg piece cut into 3 pieces) • 2 tbsp ginger garlic paste • 1 tbsp roasted coriander powder • 1/2 tbsp roasted cumin powder • 1 tsp turmeric powder • 2 tsp black pepper powder • 1 tbsp red chilli powder • Garam masala (Grind to a powder 1-inch cinnamon, 5 green cardamom, 3 black cardamom, 5 cloves, 2 small pieces of javitri, 2 bay leaves) • Golden brown fried onions of 2 big onions • 4-5 tbsp curd • 1 tbsp ghee • 2 tbsp oil in which the onion was fried • Salt as per taste • 4-5 pieces pathar ke phool/biryani phool and crushed with hand • 6-7 sprigs each of green coriander and mint leaves coarsely chopped Potli Masala Water • 4 cloves, 3 green cardamom, 2 black cardamom, 1 star anise, 2 bay leaves, 1/2 inch cinnamon – Lightly crushed to release the flavor • Put everything in 250 ml water and heat in a low flame for 30 minutes. Odia Aloo Chop

Ingredients • 4 boiled potatoes coarsely mashed • 1/2 onion finely chopped • 2 tsp grated ginger • 1.5 tsp grated garlic • 1/2 or 3 tbsp grated beet root • Handful of crushed groundnuts • 1 tsp each of roasted cumin powder, roasted coriander, red chilli powder, chat masala • 1/2 tsp turmeric powder • 1/2 tbsp mustard oil • Salt as per taste • 1 tsp ajwain seeds • Besan Process • In a pan, add the mustard oil and lightly saute the onions. Spicy Chicken Kadhai Fry

Ingredients •1 kg chicken cut into small pieces •2.5 tbsp ginger garlic paste •2-3 tbsp Mustard oil •1/2 lemon juice •1 sprig of curry leaves •Salt as per taste •1 tsp red chilli powder •2 tsp black pepper powder •3 medium onions finely chopped •1 tsp turmeric powder •1/2 cup curd well beaten For the kadhai masala (for 1 kg chicken) •4-5 whole dry red chilli •1 tbsp coriander seeds •1 tsp cumin seeds •1/2 inch cinnamon stick •4-5 cloves •1 bay leaves •4 green cardamom pods Marination Marinate the chicken with 1.5 tbsp ginger garlic paste and 1 tbsp salt. Marinate for atleast an hour Kadhai Masala Dry roast all the ingredients for 4-5 mins until you smell the aroma. Cool it and grind to a fine powder.
