Chicken, Raw Mango and green apple salad with a egg yolk honey dressing

Ingredients

•1 Raw Mango (not too sweet or sour) - peeled and cut into small cubes
•1 English cucumber - peeled and cut into small cubes
•1 Green Apple - cut into small cubes
•1 green chilli - finely minced
•1/2 cup green coriander and mint leaves - coarsely chopped
•2 boiled eggs
•250 grams chicken tenderloins or boneless chicken
•Black pepper to taste
•Salt to taste
•Honey - 2 tsps
•Olive oil

Process

•Blanch chicken in water added with a little salt. Once done, cut into small cubes.

•Hard boil the eggs. Cut into half, remove the yolk from the whites. Cube the whites.
•In a small bowl, whisk the yolk with a little water and 1 tsp of honey. This is for dressing.
•In a salad bowl, add cubed mango, cucumber, green apple, chicken, egg whites. Add chopped chilli, green coriander, mint leaves. Add salt and black pepper as per taste and a slight drizzle of olive oil.
•Mix well and arrange on a plate.
•Slightly drizzle the egg yolk honey dressing and enjoy!!!
