Seafood Linguine in a garlic tomato sauce

Ingredients

•200 grams Linguine
•150 grams prawns - descaled and deveined and marinated for 5-10 mins in mirin, salt
•150 grams boneless fish - cut into small cubes and marinated for 5-10 mins in mirin, salt
•3-4 medium sized tomatoes - finely chopped
•1 small onion - very finely chopped
•5-6 cloves garlic - very finely chopped
•2 tsp mirin
•2 tsp oregano
•Black pepper to taste
•Salt to taste
•Olive oil

Process


Sauce and Seafood

•In a pan heat some oil and fry prawns and fish until cooked. It should not be chewy. Take the prawns and fish out.
•In the same pan add chopped tomatoes, onions and garlic and saute them. Add some water, oregano, black pepper and make a sauce from it.


Linguine

•Heat water in a big vessel, add 1 tbsp salt and 1 tbsp oil in it. Wait until the water starts to boil.
•Add the Linguine and cook until its soft.
•Drain the Linguine and mix 1 tsp oil in it, so they don't stick to each other.


Final Step


•In a big pan, add 1 tsp oil and add the linguine and the tomato sauce. Mix well.
•Check for seasonings and add salt and black pepper as per taste.
•Mix well. Do not make it dry at all.

Serving

•Dish out the linguine in the the tomato sauce on to a plate.
•Put the shallow fried prawns and fish on it.
•Sprinkle a pinch of black pepper and green coriander leaves and serve.

Enjoy while its still hot!!!

Chicken in Coconut Milk

  1)  1 kg curry sized chicken on the bones - marinate with 1 tsp turmeric powder, 2 tsp red chilli powder, a pinch of hing, 2 tbsp vinegar, 1 tsp black pepper powder and salt as per taste. Marinate for 30 minutes. 2 )  Add mustard oil in a kadhai, when hot add the marinated chicken and fry well for 7-10 minutes until the chicken is 90% cooked and raw smell of chicken in gone.
