Aloo Roganjosh

          Ingredients •4-5 medium sized potatoes cut into medium sized cubes •1 tbsp olive oil/mustard oil •Salt as per taste •4 green cardamoms •2 black cardamoms •4 cloves •1 tsp roasted fennel powder •3 tsp ginger powder •1 tsp chilli powder •1/4 tsp garam masala •1/4 tsp hing/asafoetida •1/2 cup yoghurt, whisked well •A pinch of turmeric Marination •Mix potato cubes, turmeric, garam masala, 1 tbsp yoghurt and salt. Marinate for 1 hour. Process •Add oil in a kadhai. Add green and black cardamoms and cloves. Let it splutter. •Add the marinated potatoes. Fry for 3-4 minutes. •Reduce the flame to medium. •Mix hing/asafoetida in 2 tbsp water and add over the potatoes. Fry for another 2-3 mins. •Add chilli powder and fry for another minute or so. Sprinkle a little of water so the masala doesn’t burn and stick to the bottom of the kadhai . •Add fennel and ginger powder and fry for another 3-4 minutes...

Elephant Yam (Olua) Kabab

                                     Ingredients •150 grams elephant yam (olua) peeled and cut into 1/4” thin slice. •1 medium potato peeled and coarsely grated •Salt as per taste •2 small pieces dried mango (ambula) or 1 tbsp tamarind pulp •1/2 medium onion finely chopped •1 green chilli finely chopped •1 tbsp besan •1/2 tsp chilli powder •1/2 tsp black pepper powder •1/4 tsp garam masala •2 cloves garlic minced •Oil for frying Process •Boil yam with the dried mango or tamarind pulp. This is a must so the itching feeling when eating the yam is not there. Add a little salt as well. Boil until 80% done. •Take out the yam and cool it. •Coarsely mash the yam and mix grated potato, onion, chilli, besan, chilli powder, black pepper powder, garam masala, minced garlic. Prawn Malai Curry

Ingredients • 1 kg medium sized prawn de-scaled • 2 tsp turmeric • 1 tsp salt • 3 tsp chilli powder • 2 medium sized onions finely chopped • 2 medium sized onions rough cut+1 medium sized tomato ground to a coarse paste • 1 tbsp ginger garlic paste • 2 tbsp thick curd • 1 tsp roasted cumin powder • 1 tsb garam masala • 4 tsp mustard seeds ground to a fine paste and strained to have a silky smooth paste • 1 medium sized coconut cut into pieces • Water from 1 green coconut • 3 green chillies • 1 tsp sugar • Mustard oil for frying around 3 tbsp • Salt as per taste Process Marination and Pre-Processing • Mix the prawns, 1 tsp turmeric, 1 tsp salt and 1 tsp chilli powder and marinate for 15-20 minutes. • Grind the coconut pieces along with the green coconut water to a fine paste and strain to have a silky-smooth coconut milk. Garlicky Hing Chicken Fry

Ingredients •500 grams chicken cut into medium pieces •1 tbsp black pepper powder •8-9 cloves of garlic finely minced •1 tsp hing •Salt as per taste •3 green chillies slit •Mustard Oil for frying •Coriander leaves for garnish Process Marination •Mix the chicken, black pepper powder, minced garlic, hing and salt. Marinate for atleast 2 hours. Final Step •Heat 1 tbsp mustard oil in a wok. •Add the marinated chicken and fry on high flame for 2-3 mins. •Simmer the flame and cook the chicken until cooked. •During the last 1 minute of cooking, add the green chillies. Note: If you want a very little gravy, add ½ cup water atleast 5 mins before the cooking ends. Serving Dish out hot and garnish with green coriander leaves!!!

Lemon Chicken

Ingredients •500 grams of boneless chicken cut into bite sized strips •1 egg •1 tbsp black pepper powder •1.5 tbsp cornstarch •Salt as per taste •1 big onion – cut slightly thick sized west to east •1 medium green pepper – cut slightly thick sized •8 garlic cloves – very coarsely chopped •4 green chillies – cut slightly thick sized •1 tbsp honey •4 lemons and 1 orange •Oil for frying Process Marination •Mix the chicken, 1 egg, black pepper powder and 1 tbsp cornstarch and marinate for atleast 1 hour. Lemon Sauce •Make fine juliennes of lemon and orange skin. Keep aside for later use •Squeeze the juice of the lemon and orange. •Boil the juice of lemon and orange with 3 cups of water and honey until a slightly thick consistency. •Save this for use Final Step •Heat oil in a deep frying vessel and deep fry the marinated chicken until 80% cooked. •Re-fry the chicken for the chicken to be crispy. •Heat 1 tbsb oil in a wok. Seafood Linguine in a garlic tomato sauce

Ingredients •200 grams Linguine •150 grams prawns - descaled and deveined and marinated for 5-10 mins in mirin, salt •150 grams boneless fish - cut into small cubes  and marinated for 5-10 mins in mirin, salt •3-4 medium sized tomatoes - finely chopped •1 small onion - very finely chopped •5-6 cloves garlic - very finely chopped •2 tsp mirin •2 tsp oregano •Black pepper to taste •Salt to taste •Olive oil Process Sauce and Seafood •In a pan heat some oil and fry prawns and fish until cooked. It should not be chewy. Take the prawns and fish out. •In the same pan add chopped tomatoes, onions and garlic and saute them. Add some water, oregano, black pepper and make a sauce from it. Linguine •Heat water in a big vessel, add 1 tbsp salt and 1 tbsp oil in it. Chicken, Raw Mango and green apple salad with a egg yolk honey dressing

Ingredients •1 Raw Mango (not too sweet or sour) - peeled and cut into small cubes •1 English cucumber - peeled and cut into small cubes •1 Green Apple - cut into small cubes •1 green chilli - finely minced •1/2 cup green coriander and mint leaves - coarsely chopped •2 boiled eggs •250 grams chicken tenderloins or boneless chicken •Black pepper to taste •Salt to taste •Honey - 2 tsps •Olive oil Process •Blanch chicken in water added with a little salt. Once done, cut into small cubes. •Hard boil the eggs. Cut into half, remove the yolk from the whites. Cube the whites. •In a small bowl, whisk the yolk with a little water and 1 tsp of honey. This is for dressing. •In a salad bowl, add cubed mango, cucumber, green apple, chicken, egg whites. Add chopped chilli, green coriander, mint leaves. Add salt and black pepper as per taste and a slight drizzle of olive oil. •Mix well and arrange on a plate. •Slightly drizzle the egg yolk honey dressing and enjoy!!! ...
