Kadhai Chicken/Mutton Fry

Ingredients
  • 1 whole chicken cut into medium pieces with a little fat.
  • 2 tbsp chopped ginger
  • 3-4 green chillies finely chopped
  • 2 medium tomatoes cut into medium pieces
  • Coarsely ground roasted cumin and coriander - 2 tsp
  • Salt to taste
  • 1/2 tsp ghee
Process
  • In a kadhai, add the chicken with the fat and saute on medium heat for 5-10 minutes.
  • Now add ginger, green chillies, salt and saute for another 15 minutes.
  • Add the cumin and coriander powder and mix well and saute for a minute.
  • Add the tomatoes on the top and the ghee.
  • Cover the kadhai and keep it on medium heat stirring the chicken in between. The tomatoes should now be mixed into the chicken well. Adjust salt and add green chillies, if you like more spiciness.
  • Cover the kadhai again and let it be on medium heat until chicken is cooked and dried. This should take another 10-15 minutes.
  • Take out from the heat and serve as a starter. If you want garnish with fresh coriander leaves.

You can prepare kadhai mutton fry the same way.
