Kalija (Liver) Fry

Ingredients
  • Liver of Chicken or Mutton: 500 grams chopped to 1 inch cube
  • 1 Large Onion finely chopped length wise
  • 8 cloves garlic finely chopped
  • 1 inch ginger finely chopped
  • 1/2 tbsp ginger garlic paste
  • 1 tbsp meat powder, 1/2 tbsp chilli powder
  • Mustard oil as required
  • Salt as required 
Process
  • Wash the livers in water properly and put it in a bowl.
  • Add some water to the bowl and some salt. Boil the same on a low heat for 5 minutes.
  • After boiling, remove the liver pieces and mix them with the meat powder, chilli powder and some salt and keep aside.
  • In the mean time take some kadai and add the oil to it. When its hot add the chopped onions and fry for 4-5 minutes. add the chopped garlic and ginger now and fry further for 2 minutes. now add the ginger garlic paste and fry until the oil separates out.
  • Add some water (1 cup) and bring to a boil. Then add the marinated liver pieces and stir it such that the gravy covers the livers.
  • Cover the kadai with a lid and laeve for 5 minutes.
  • Put it on low heat.
  • Cook till all the water evaporates.

Chicken in Coconut Milk

  1)  1 kg curry sized chicken on the bones - marinate with 1 tsp turmeric powder, 2 tsp red chilli powder, a pinch of hing, 2 tbsp vinegar, 1 tsp black pepper powder and salt as per taste. Marinate for 30 minutes. 2 )  Add mustard oil in a kadhai, when hot add the marinated chicken and fry well for 7-10 minutes until the chicken is 90% cooked and raw smell of chicken in gone.
